You can harvest these long, thick, scrumptious orange roots any time after they reach about 8 inches long, but why? The flavor doesn't diminish one iota, and they will quickly grow to about 14 inches long (with a diameter of 2 inches!) if you let them. Such fun to pull from the ground, too -- a nice change of pace for the veggie patch! The flavor is tender and mild, superb for fresh eating or cooking alike. And if you're juicing them or using them in large recipes, they're much easier to work with than masses of smaller, thinner carrots.
