Radicchio, or Italian Chicory, is equally delicious raw in salads or sautéed, steamed, or grilled, the strong, spicy flavor of its reddish, white-ribbed leaves providing a uniquely delicious bite. Easy to grow but performing best in spring (Zone 8 and above) and fall (everywhere), radicchio matures in around 3 months and should be picked when it’s mature but not old. Of the several varieties of radicchio, Verona and Treviso are the most common in the US. If you’ve never tried radicchio, now is the time!
