The radish is a cool-season that’s so easy it’s often the first vegetable children try to grow! They just sow the seeds, wait a month, then pull up the colorful, crunchy roots, which are usually eaten raw. Radishes are classified as winter or summer: summer being small, globe-shaped or elongated, and a bold red, pink, purple, white, or red and white; winter types are larger and white, black, or green. Both varieties are low in calories, rich in nutrients, and offer crisp, rich flavor that ranges from mild to fiery hot. Even the greens are tasty and nutritious!
