Sweet Potato Murasaki, a Japanese sweet potato, is grown as a root vegetable. The sweet potatoes are medium to large in size with an elongated, somewhat bulbous, oblong shape. They have deep purple skin and white flesh that has a sweet, nutty flavor. Sweet potatoes are considered a superfood for their nutrient rich content, having a high (top 20) Aggregate Nutrient Density Index score (ANDI), or micronutrient-per-calorie density. They are an excellent source of vitamin A and a good source of vitamin C, dietary fiber, and potassium. Sweet potatoes also contain iron, calcium, protein, and beneficial amino acids.

A tender perennial, typically grown as an annual, Sweet Potato Murasaki is a member of the morning glory family (Convolvulacea). Despite its Louisiana roots, Murasaki is often referred to as a Japanese sweet potato. A vining slip, Murasaki grows quickly in warm soils and has a moderate yield. The slips are self-pollinating.

Sweet Potato Murasaki is cold hardy and easy to grow, growing best in sunny locations with well-draining soil. For best texture and flavor, soils should be kept evenly moist. This sweet potato variety is highly resistant to southern root-knot nematode. It is also resistant to soil rot and fusarium root rot.

A warm-season vegetable, sensitive to cold temperatures and frost, sweet potatoes can be direct sown into warm spring soil after the last frost date. Mulching helps to moderate soil temperature as well as to maintain soil moisture and control weeds.
