'Nicola' Potato is a tuber vegetable that produces huge yields of crack-resistant oval-shaped spuds with smooth, thin, light brown to golden yellow skins having a few shallow eyes. The golden yellow flesh is firm and dense, becoming smooth and fine grained when baked, roasted, or boiled and mashed. The potatoes have a mild, nutty, and earthy flavor; waxy texture; and a low starch/high moisture content. Potatoes are a good source of dietary fiber, magnesium, and potassium.

An herbaceous perennial, typically grown as an annual, 'Nicola' Potato is a member of the nightshade family (Solanaceae). The upright, semi-erect vining plant blooms in white flowers and produces high yields of potatoes per plant. To increase yields, cover 70 percent of the stems with straw or other compost as potato foliage grows. The tubers are resistant to internal bruising, foliage and tuber blight, and common scab and blackleg. To reduce risk of disease, practice crop rotation year on year.

Potatoes grow best in sunny locations with fertile, well-draining sandy soil, having an acidic pH. For best texture and flavor, soils should be kept evenly moist until flowering stops. Then, cut water in half. 'Nicola' Potato is drought resistant.

A cool-season vegetable, one of the first to be planted in the garden, potato can be direct sown into the garden in early spring 2 to 3 weeks before the last frost date. It needs cold temperatures to germinate and grow and tolerates moderate frost.
